As Fabienne Fredrickson said,“The things you are passionate about are not random, they are your calling.” My passion is baking! I love experimenting and creating new recipes. It’s fun for me to conceive of an idea in my mind and then watch it come alive in the kitchen. Ironically, my dad used to make fun of me for burning a No-Bake Cheesecake. In my defense, I burned the butter for the crust. Live and learn right??
So, why muffins? Time and nutrition. When my son was younger, I realized that I could hide fruits and vegetables in muffins and he would gobble them up. I also realized that when we were time crunched, muffins were an easy make n’ take breakfast we could eat in the car.
Muffins are just an easy and healthy way to start a busy day! I discovered with a little bit of planning and baking on the weekends, I could have more calm mornings. This is so important for a working, single mom!
But when I first started baking, I just added in fruits, veggies and black beans into store- bought muffin mix. Then, I started to read labels and realized I didn’t want to feed my son (or dog!) that crap. Here are pictures of some of my earlier baking adventures:
My son also has a severe Nut Allergy, so baking from scratch adds a layer of security to what he eats.
For myself, I have a horrible sweet tooth and love to make clean-eating versions of my favorite sweets. I am also Vegan because it is what is best for the planet (and I love animals!!) You will find most of my recipes are in fact, Vegan and Gluten Free. You can read more about that here.
