So, I have a love/hate relationship with running. My brain loves it, my body does not. I run and run like there’s no tomorrow and then I get injured. A couple of weeks ago, I went for a run, came back and couldn’t see my ankle. I don’t like to take pain meds, so I started Googling anti-inflammatory foods. The ingredients in my Anti-inflammatory Muffins came up consistently on every list I found.

These muffins are delicious after a workout and my ankle is better. However, I’m not sure if it’s due to my muffins or the fact that I have been subbing my runs with lovely swims in the pool. This girl needs to move! Movement for me is meditation, so if I can’t get outside to exercise, I’m GRUMPY!

When I’m injured, I tend to clean up my diet. I know I am not burning as many calories, so no more cake for me! But of course, I still have my sweet tooth. Will that ever go away?? Actually, being injured is a great time for tinkering in the kitchen. This is when I try to find healthy ways to satisfy my insatiable love of all things sweet. Come to think of it, my best ideas come to me when I can’t run as much as I would like. Cheers to Creativity!

Makes 6 large or 12 mini Muffins


  • 1/2 C Coconut Flour
  • 3 Eggs, whisked
  • 1/4 C Tart Cherry Juice
  • 1/4 C Coconut Oil
  • 1 Tsp Baking Powder
  • 1/2 Tsp Powdered Ginger
  • 1/2 Tsp Turmeric
  • 1/2 C Chopped Beets
  • 1/3 cup Blueberries
  • Liquid Stevia to taste


Bake for 40-45 Minutes or until firm.
