I did it! I’ve been wanting to create a Mug Muffin for the longest time. A Mug Muffin only takes a few minutes, so it is great for when you want an individual snack.

The funny thing is, this is the quickest, easiest recipe I’ve ever made. So I can’t blame the fact that I haven’t made this due to lack of time;)
This weekend, I’m cleaning out the closets. Wow! It feels good. I recently read an article that said you should get rid of everything that doesn’t represent who you are in this moment. That’s huge! That means getting rid of things from old boyfriends, hobbies and even the shape of my body. Here’s a good article on HOW to do it.
Yep-I’m throwing out the skinny jeans. I’m no longer a size 0, so why the hell are these still occupying space in my closet? That beautiful ring holder my ex boyfriend got me in Pakistan? That too. Running shoes I have collecting in the bottom of my closet, gifts from former students (that I never quite know what to do with) and books that I hated but still have on my bookshelf because I hate to get rid of books. Someone will love and use all of these things.
Since I’m busy diving head first into my closets, I don’t really have time to bake this weekend. But I wanted a quick snack. Plus, I wanted to use up the pumpkin puree and homemade applesauce I’ve had in my freezer since October. That’s right! the Fridge and freezer are being cleaned out too!!
I used a mug that I received for placing 1st in my age group during a race. I love this mug. But it doesn’t represent who I am anymore. I am no longer pushing my mind and body to the limits in order to receive accolades. After this recipe, it’s going too.
This recipe is super easy. Mix everything in a mug, cook for 2 minutes in the microwave and you are done! A quick, healthy snack. Since I didn’t want extra sugar, I used Liquid Stevia to sweeten the muffin.
