Apples n’ Nut Butter. Is there a better snack? Enjoy the taste of crisp apple and creamy nut butter in one, delicious muffin. As an added bonus, these muffins are flourless. I basically baked my mix of apples n’ nut butter in a muffin tin. A tablespoon of Ground Flax serves as the binder and egg replacer. It’s an easy, healthy snack.
I love to eat this before a run. It gives me a little boost without filling me up. This week I had some gorgeous runs, on my beach, of course!
We actually had a bit of weather (ha!) And I saw a mini funnel cloud that the news dubbed a “Tornado.” Maybe because it eventually hit the water? Lol, I have no idea. We don’t have tornadoes in San Diego. Anyway, back to muffins….
Apples n’ Nut Butter Muffins
For this recipe, you can use any Nut Butter you desire. As usual, I used Sunflower Seed Butter. Sunflower Seeds are on the 100 healthiest foods list. I love them for the fact they are nut free and an excellent anti-inflammatory source of nutrition. You can either buy Sunbutter or make your own like I did here:
There is no fancy recipe. I basically throw about a cup of Sunflower Seeds and a 1/4 cup olive oil in the food processor and push start. Scrape down the sides and and add more liquid as needed. I like my sunbutter on the chunky side, so I tend to not add too much liquid.
Apples are also one the World’s Healthiest Foods with benefits like antioxidant, anti-cancer, anti-asthma, as well as cardiovascular. However it’s important to buy only organic as they are also on the Dirty Dozen list. This list includes: apples, peaches, nectarines, strawberries, grapes, celery, spinach, sweet bell peppers, cucumbers, cherry tomatoes, imported snap peas and potatoes.
I also made my own apple sauce like I did in this recipe. It’s so easy! Just throw everything in the crockpot. But, again, you can buy and use any applesauce. When everything was mixed, I spooned it into my mini muffin tin and baked!
