Coconut Coffee Muffins

I love coffee. I mean,  I Loooovvvve it! I drink it black-no frills. Just dark, deliciousness. Sometimes, I go to sleep early just so I can wake up and drink my coffee. Crazy, right?? But Coconut Coffee? New concept for me. I know many of my Paleo peeps drink their coffee “Bulletproof.” It’s basically coffee with coconut oil or butter in it.

I had to give it up coffee about two years ago due to my severe acid reflux. And I did so for about a year. Most boring year of my life. I decided to slowly add it back into my diet as my acid reflux seemed to get under control. Thank goodness! Because my favorite time of day is morning with my coffee and a good book.

Anyway, back to this recipe. I was in Costco the other day and they were sampling Coconut Coffee. I tried it. It was good, but very sweet-like dessert. Then I looked at the ingredients-pretty much pure sugar.

But that’s when inspiration struck. I knew I could make a healthy version in muffin form. I went home, tinkered in the kitchen and here you go! Paleo Coconut Coffee Muffins.

I used all organic ingredients: Eggs, sugar, coconut flourshredded coconut, and low acid coffee. I wanted to make something that I would actually eat, so that’s why they are Paleo:) And eat I did, I promptly ate 2 right out of the oven. I froze the rest so I wouldn’t be tempted:)) These can be defrosted in the microwave for 1 minute.

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Coconut Coffee Muffins


  • 1/2 C Coconut Flour
  • 2/3 C Strong Brewed Coffee (cooled)
  • 1/2 C Brown Sugar
  • 1 TBSP Coconut Oil
  • 3 Eggs
  • 1/4 C Shredded Coconut


  1. Preheat oven the 400 Degrees
  2. Spray a 6 cup muffin tin with non-stick spray
  3. Blend all wet ingredients
  4. Blend all dry Ingredients
  5. Combine wet and dry ingredients
  6. Spoon into 6 muffin cups
  7. Bake for 20 minutes
