Look at how deep and dark these are! And they contain only 2 ingredients-Dried Figs and the Espresso Beans. Preparation is easy- just whip the ingredients in a food processor and press it into a muffin tin.
Dark Chocolate Covered Espresso Bean Muffins
So, I had an abundance of Dark Chocolate Covered Espresso Beans, just begging to be used up. Consequently, I bought them for a recent 12 Hour Night Race. Obviously, I didn’t eat the entire container that night. But I will say, they do work! Actually, I have used them before for other night races and the sweetness with caffeine hits the spot at about 2AM.
True story, I didn’t feel tired until I got home at about 11am. And it was such a magical night! The full moon was huge and bright. At times, it was a vibrant orange hue. Just gorgeous! I thoroughly enjoyed my run that night:))
After my run, I enjoyed my Single Serve Recovery Muffin.
Now that I have an abundance of muffins, rather than Chocolate Covered Espresso Beans, I think it’s time to bring some treats to work;)
