Indeed, I made these Take a Hike No Bake Energy Muffins the night before a hike up San Jacinto Peak.  With a long climb in mind, I created them with energizing ingredients. Dates and bananas are always perfect. But I also threw in some Matcha for the caffeine and Maca for an energy and stamina boost.

Silly me, I didn’t plan very well packaging wise, so we enjoyed these after our hike. And they hit the spot! But next time, I’ll bring them to eat ON the trail:)

Take a Hike No Bake Energy Muffins

Ingredients

  • 1 Cup Oat-Covered Date pieces
  • 1/2 Cup Banana Chips
  • 2 Tsp Maca Powder
  • 1 Tsp Matcha Powder
  • Dash Cinnamon
  • 1/4 C Coconut Water*

Instructions

  1. Blend all ingredients in a food processor until a thick paste forms
  2. Press into prepared muffin tin
  3. Press a Banana chip into the top of each muffin
  4. Allow to set in fridge for about 10 minutes

I used a really yummy Coconut Aloe Water from Trader Joe's.
