Too hot to turn on the oven? Make Raw Trail Mix Muffins! No doubt about it, Global Warming is real. Growing up in San Diego, we had one type of weather: 75 and sunny. Nowadays, I might as well be living back in Texas. It is so hot!! I hate to be a whiner, but it’s soooo hot! Usually, I hate air conditioning. I’m the dorky one in a sweater in the middle of summer. But when it is 95 degrees, at the beach, turn that A/C up!

But in truth, it really is sad that we are slowly destroying our planet. I try to do my part by eating vegan when possible, driving a low emission vehicle, riding my bike/running to do my errands, recycling and buying recycled products. This week, I found myself blowing off my runs and opting not to bake. But when I needed a treat to bring to my weekly Team meeting, I created my Raw Trail Mix Muffins. These were easy to throw together and yummy eaten right off the spoon. Can you say upgraded Nut Butter??

Raw Trail Mix Muffins

Total Time: 25 minutes

Serving Size: 12 Mini Muffins

Raw Trail Mix Muffins

Raw Trail Mix Muffins


  • 1 C Organic Oats
  • 1/2 C Sunbutter (or favorite Nut Butter)
  • 1/4 C Dried Cranberries
  • 1/4 C Sunflower Seeds
  • 1/4 Chocolate Chips
  • 1/2 C Maple Syrup


  1. Blend all ingredients in a large bowl
  2. Press 2 spoonfuls of the mixture into 12 Mini Muffin Cavities
  3. Refrigerate for 20 minutes before removing from pan

You can sub raisins or any other ad-ins for the cranberries, chocolate chips and sunflower seeds. Get creative!
