Cheesy Broccoli Egg Muffins– Julian’s breakfast this week. I made these so I could sneak in more veggies in his diet. Even though we have vegetables with dinner, I know he doens’t eat any at lunch. I added cheese because I know he loves it. Personally, I don’t digest it very well.

The theme this week seems to be gratitude. So, let’s talk gratitude. I am beyond grateful for my life and every person or thing in it. It’s my routine to thank GOD every night for my blessings. Every morning, I think of 3 different things that I am grateful for. I truly believe if everyone did this, our world be a different (better) place.

I don’t need a journal, I just ruminate on my blessings daily. And I know that all of it can be gone tomorrow. I don’t take anything for granted. And I am thankful for things to come. For I know that great blessings are headed my way!

Am I grateful for these muffins? Yes, and I am thankful that I can make healthy foods for my son. I grateful for my son! I am grateful for the oven in my house that bakes these Cheesy Broccoli Egg Muffins. I am grateful that I have a mind that can conceive of my muffin creations. I am grateful that I have healthy body that can move around and bake. I am grateful for the internet and this blog for allowing me to publish my creative ideas. I am grateful for you, DEAR READER, for being here. I am grateful for my job that affords me my home and food on the table. I am grateful for my dog Koby, who brings light, love and laughter (even if he doesn’t know it:) I am eternally grateful for my students who are my best teacher. I am grateful for all of my family, who love me no matter what. I am grateful nature, books, friends, water… the list is endless.

Cheesy Broccoli Egg Muffins

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 10 minutes

Cheesy Broccoli Egg Muffins

Cheesy Broccoli Egg Muffins

Ingredients

  • 8 Eggs, whisked
  • 1 1/2 C Broccoli (steamed and chopped)
  • 8 oz. Cheese of choice (shredded)
  • Salt and Pepper to taste

Instructions

  1. Preheat Oven to 400 Degrees
  2. Steam the Broccoli
  3. Whisk the eggs
  4. Chop the Broccoli in a Food Processor
  5. Shread the Cheese
  6. Combine all ingredients in a large Bowl
  7. Divide evenly among a well oiled muffin tin
  8. Bake for 25 min

I started checking these after 20 minutes of baking. Mine came out perfectly after 25 minutes.
