Chocolate Chai Mug Muffin
I made this Chocolate Chai Mug Muffin when I came home from my travels to find I had minimal food in my house.
Coconut flour, Chai Tea and Flax Seed Meal are staples in my house. And I just happened to have packet of Vegan Protein Powder in my purse that I didn’t use during my trip. Yes, I bring Vegan Protein packets with my on my travels. It’s good to be prepared! These ingredients inspired this super simple, yummy breakfast!
When I’m traveling I also love to take packets of nutrient dense Super Food that I can easily throw into a glass of water. And, (TMI alert!) I tend to get constipated when I travel. Don’t tell me you don’t! So, I remedy that by taking a scoop of Magnesium Powder every day. I feel ridiculous carting my tub of Magnesium around, but it’s necessary!
Notes about this recipe: If you are not Vegan, you can sub an egg for the flax. If you are making a flax egg, make sure to use “Flax Seed Meal” as it will gel better than ground flax. Also, the Vegan protein I used was from a local grocer that you may not have in your area. As such, use any protein powder that you prefer;) Finally, I didn’t add sugar to my mug muffin as the powder was already sweetened with Stevia. But you can add sweetener as your palate desires.
