This Coconut Pumpkin Butter Muffin for One is perfect for occasions when you just want a quick snack or dessert all to yourself! In my case, I’m sick. And I’m dying to get in the kitchen and create a new recipe. But I know that whatever I make, I can’t share it with anyone else. I have so many recipe ideas, but I don’t need a ton of muffins filled with my germs!

Ironically, on a whim, I got a flu shot when I was at the doctor last week. Hmm…did the Flu Shot make me sick? Not sure, but it sucks because I was supposed to run a race today and I didn’t.

Twin Peaks is 50 mile race with 15,000 feet of climbing. Even if I were 100% well, this would have been the toughest race I’ve ever done. Actually, I was looking forward to it. But whenever something like this happens, I just figure there is a reason. Perhaps by staying home, I was protected. From what, I’ll never know.

Coconut Pumpkin Butter Muffin for One

This recipe is, as usual, Vegan. But it’s also Paleo and Sugar Free. Organic Canned Pumpkin that I picked up at Trader Joes’ and coconut flour¬†make up the bulk of the recipe. Also, I used a new ingredient that I’ve never tried before-Coconut Butter. Holy Moly this stuff is good! I tried to make it myself and it didn’t turn out. Good thing it’s getting easier to find in stores. For the sweetener, I used Liquid Stevia. Stevia is my go-to sweetener. I use it in everything, even salad dressings:)

1 Mug Muffin

Coconut Pumpkin Butter Muffin for One


  • 3 TBSP Organic Pumpkin
  • 3 TBSP Organic Coconut Flour
  • 6 TBSP Coconut Milk
  • 1 TBSP Coconut Butter
  • 3 Droppers-full of Liquid Stevia*
  • 1/4 Tsp Baking Soda
  • 1/4 Tsp Apple Cider Vinegar
  • 1/4 Tsp Cinnamon


  1. Spray a microwave safe mug with non-stick Spray
  2. Mix all ingredients in the mug
  3. Microwave ~2:30 minutes

*Add sweetener as desired and taste-test before putting it in the microwave
