This recipe came about as a need. A Chocolate need. A need to use up the delectable, Dark Chocolate in the cupboard calling my name.

Actually, I never buy chocolate for myself. Yes, I will eat if it is there. So when someone gave me an entire Library of Exotic Dark Chocolate, I knew I was in trouble. I have to give myself props though, I managed to push it the back of my cupboard and actually forget about for a a week or two.

But this chocolate is special. This is not your run of the mill, scarf down without breathing kind of chocolate. This chocolate is to savor. I know, easier said than done! I wanted to use it to make something special, yet healthy, and of course, Vegan. The beauty of this brand of chocolate is that is, in fact, Vegan.  However, feel free to substitute with any good quality Dark Chocolate.

I’ve been wanting to create a recipe using Hemp Seeds because it is so good for you! They are a complete Protein chock full of amino acids, vitamins, minerals as well as Omega 3, 6 & 9. And the combination of Chocolate Hemp seemed irresistible. Dried Figs are naturally sweet and I figured they could be the glue that would hold my Chocolate Hemp concoction together (because dates are sooo yesterday;)  Finally, Coconut Oil provides just the right amount of moisture for processing.

It has been scorching hot in San Diego. By scorching hot, I mean up to 100 degrees in Del Mar (a coastal city!) Thank you Global warming. These days, I can’t bear to turn on the oven. I have several ideas for no bake recipes, and this is one of them;)

I guess I have to come to terms with the fact that the San Diego of my childhood no longer exists. In which case, we will enjoy no-bake muffins;)

Total Time: 20 minutes

7 mini muffins

Crunchy Chocolate Hemp Muffins

Ingredients

  • 1 Bar (3 oz) Good Quality Dark Chocolate (72% Cocao or higher), Divided
  • 2 TBSP Hemp Seeds + More for sprinkling
  • 2 TBSP Coconut Oil
  • 4 oz Dried Figs (approx 2/3 C)

Instructions

  1. Prepare Muffin tin with non-stick spray
  2. Blend 1/2 bar chocolate, hemp seeds, coconut oil and figs in a food processor until you have a nice paste
  3. Break up the remaining chocolate into little bits
  4. Fold in the chocolate
  5. Press mix into muffin tin cups
  6. Sprinkle Hemp Seeds on top
  7. Refrigerate for about 15 minutes
