Lately, I have been craving chocolate like nobody’s business. Maybe it’s because Valentine’s Day is around the corner and I can already smell the chocolate. Yet, I have zero restraint when it comes to chocolate. If someone gives me a box, I will eat the entire thing!
Anyway, I decided to make a healthier treat to satisfy my craving. And I thought these Muffins were delicious! Dried Figs are the base rather than the ol’ Dates-as-Binder standby. Seeds from the Figs, plus the Fennel and Pepitas add a nice crunch.
I love Fennel Seeds so much I eat them after every meal as a digestive. But they are also a rich source of essential minerals like copper, iron, calcium, potassium, manganese, selenium, zinc, and magnesium. However, they are an acquired taste. Either love em’ or hate em’. If you’ve never had them. think-Black Licorice.
For added health benefits, use Organic Cocao in this recipe. Cocao is less processed than the Cocoa Powder you find in the grocery store. Plus, it’s high in Magnesium and Iron. Hmmm…maybe I’m low and that’s why I’ve been craving chocolate:))
One day, the Cocoa Fennel flavor combination just popped into my head. When I Googled it, all that came up were Spice Rubs. Apparently, this is a delicious combo to rub on Pork Tenderloin. Haha!
