Everything Christmas Muffins
I created these Everything Christmas Muffins because, just like my Ultimate Thanksgiving Muffin, I wanted an all-encompassing muffin. One special muffin with all the great flavors of the Holiday season. Filled with cranberries, eggnog, cinnamon, nutmeg, orange zest, persimmons, these are sure to get the thumbs up from your family on Christmas morning.

Homemade Cranberry Sauce
It is so easy to make and so much better than the store bought, canned stuff. Basically, I took 1 12 oz. package of cranberries, 1 cup sugar, 1 c Orange juice and 1 chopped Persimmon. I simmered it on the stove top for about 10 minutes. When the cranberries started to pop, I turned the burner off and mashed the remaining cranberries with a fork.
The cranberry sauce thickened as it cooled. This recipe made a lot, so I used some in a muffin recipe for Koby and froze the rest for later:) I see some Cranberry Crumb Muffins in my future!
I decided to make these Christmas Muffins Gluten Free so, I made them with oat flour. (Save the extra calories for pie later;) Again, super easy. I put 1 1/2 C Oats in a blender and ground them into a fine powder.
I didn’t add any sugar to the batter because the Eggnog and Cranberry Sauce already had plenty. But, just for good measure, I added some Caramel Sauce to the tops of half the batch. I can’t take credit for the Caramel Sauce since it was a gift. But it was clearly homemade and so delicious. I plan to use it in several recipes to keep myself from eating it by the spoonful out of the jar.
