I love the song, “We Wish You a Merry Christmas.” Everybody! “Now, bring us some Figgy Pudding.” Figgy Pudding? What is that?? I actually had to Wiki it. I knew I wanted to make a recipe with figs since I became hooked on them during our last cruise. Fresh figs aren’t that easy to find, but dried figs are found in any grocery store.

So, after discovering exactly what Figgy Pudding is, (it’s an English Fruit Cake dessert, by the way) I decided to put my own spin on it. This entailed adding my favorite fruit of all time-Persimmons.

Persimmons are only available this time of year (Oct-Dec,) so I try to eat them as much as possible-which means everyday:) They are so sweet, they are often my dessert. Luckily, Persimmons are available at Costco. And I definitely buy these in bulk! There are several types of Persimmons. For this recipe, I used the Fuyu.

Again, I wanted something that I would actually eat, so I made these Paleo using my favorite coconut flour.

More ingredients than usual

First, I chopped the fruit and added to my food processor.

Then I used the whipping Cream to help make it into a puree. I blended all the other ingredients into a large bowl and spooned into my muffin tin.

Look! I actually used paper liners this time. I’m trying to get in the spirit:)))

Figgy Pudding Muffins

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 17 minutes

Serving Size: 6 muffins

Figgy Pudding Muffins


  • 1/2 C Coconut Flour
  • 1/4 Molasses
  • 1/3 C Brown Sugar
  • 2 eggs, beaten
  • 1 tsp Cinnamon
  • 1 Fuyu Persimmon
  • 3 Dried Figs
  • 1/3 C Heavy Whipping Cream


  1. Preheat oven to 400 degrees
  2. Spray 6 muffin liners with non-stick spray
  3. Chop the fruit into little bits
  4. Process the fruit with the whipping cream until it is smooth
  5. Combine all the dry ingredients
  6. Add the fruit puree to the dry ingredients
  7. Fold in the eggs and molasses
  8. Spoon into 6 muffin cups
  9. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
