Lately, I’ve been dipping my hand in the candy jar at work every Friday. It’s like my brain/body says, “I’m stressed, I’m done, give me chocolate!! I’ve written about this before and even created my Vegan Fudge Muffins on a similar day.

Flourless Peanut Butter and Chocolate Muffins

This past Friday, I went home and could find nothing to satisfy my sweet tooth. The only thing “chocolatey” I had was some Cocao powder. I also had a jar of Tahini. Hmmm…could I make a Vegan, Paleo version of my all-time favorite candy: Peanut Butter Cups? I set about to find out. It worked!

I only added 1/3 C sugar to the mix and Julian thought they could have been sweeter. I thought they were fine. They were extremely rich and chocolatey and just one mini muffin satisfied my cravings. Of course, you can adjust the sweetness to your liking, but you may also need to increase the liquid. Go ahead! Experiment! I do it all the time;)

Yes, I know the name of these muffins is misleading, but you can use regular ol’ Peanut Butter if you wish. Trust me, I’d actually prefer Peanut Butter, but I keep it out of the house because of Julian’s nut allergy. That, and I’d eat the whole jar in one sitting;) Crunchy please!!

 

Flourless Peanut Butter and Chocolate Muffins

Prep Time: 5 minutes

Cook Time: 18 minutes

Total Time: 23 minutes

12 mini Muffins

Flourless Peanut Butter and Chocolate Muffins

Ingredients

  • 1 Flax egg (1 TBSP Flax meal + 3 TBSP water)
  • 1/2 C Nut Butter*
  • 1/3 C Powdered Sugar
  • 1/3 Filtered Water
  • 1/3 Cocoa Powder
  • Pinch of Salt

Instructions

  1. Preheat oven to 375
  2. Spray a 12 mini muffin tin pan with non-stick spray
  3. Combine the wet ingredients
  4. Combine the dry ingredients
  5. Add wet to dry and stir until thoroughly blended
  6. Spoon evenly into the muffin cups
  7. Bake for 18 minutes or until a toothpick inserted comes out clean.

*Use Tahini or Sunbutter for Paleo and Nut-Free options
