French Toast Muffins: only 3 delicious ingredients
French Toast to go? Yes please ! I think Julian is getting tired of egg-type muffins for breakfast. He really loved the French Toast on our cruise, so that is what inspired this recipe. Now that we no longer have someone cooking for us, it’s back in the kitchen I go;)
We had an Awesome Thanksgiving holiday cruising about the Caribbean. This year, we went to Jamaica, Haiti and Cozumel. Jamaica was my favorite-it is so lush and green.
Thanksgiving dinner was on the cruise ship, of course. Royal Caribbean always has the best chefs!! I was so happy that they had a traditional Thanksgiving dinner, but they forgot the Pumpkin Pie!! However, they did have a delicious Pecan Pie, which I inhaled:))
The base of these French Toast Muffins is half a loaf of Organic French Bread from Trader Joes’ (his favorite.) The other half was promptly eaten the second it arrived in the house:)
I wanted to make these as simply as possible. So, they contain only 3 ingredients: Eggs, bread and Maple syrup. Wait a minute! My last 2 recipes have also had only 3 ingredients. Hmmmm… I might be on to something here! In essence, simplest is best.
I started by tearing the bread up into little pieces.
Then, I added the eggs, syrup and stirred the mix just until combined. 20 minutes later, portable French Toast! Yum!
