Congee is a plain, rice porridge. But you can stir in yummy condiments, like Goji Berries!

But mostly, the condiments are savory and/or salty. Pickled Tofu, Bamboo shoots and Peanuts are common additions.

But, I digress….back to muffins!!

These muffins are my best and worst recipe. I’ll  start with the good. They are completely flourless, sugar and grain free. Basically they are baked, sweetened beans. Goji Berries, Cocao and Garbanzo beans all pack a powerful nutritional punch. I’m calling these muffins my worst recipe because they took FOREVER to bake and they were still deflated when they came out of the oven. Oh well, they taste yummy and reheat well.

These muffins are delicious warm, right out the oven. But you can also reheat from frozen. Make sure to use muffin liners to help hold them together.

One day, I was craving some chocolate and these were the only chocolately confection I had in the house. I grabbed one from the freezer, popped it in the microwave for 1 minute and had a delicious Lava cake. Yum!

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

6 muffins

Serving Size: 6

Goji Berry Cocoa Bean Muffins


  • 1 16 oz Can Organic Garbanzo Beans
  • 1/4 C Cocoa Powder
  • 1/4 C Goji Berries
  • 1/2 Tsp Baking Soda
  • 1 Very Ripe Banana


  1. Preheat Oven to 350 Degrees
  2. Spray Muffin cups with non-stick Spray
  3. Soak the Goji Berries for 10 min in water
  4. Drain the Goji Berries
  5. Put all ingredients in a food processor
  6. Blend until smooth
  7. Spoon into Muffin Cups
  8. Bake for 40 minutes or until a toothpick inserted comes out clean

*These muffins are very moist, they are more like baked pudding. **Taste-Test before baking and adjust to level of desired sweetness. I thought they were just right, but you may want them sweeter:)
