Enjoy Green Muffins (they do look green right??) just in time for St. Patrick’s Day. Made with only 2 ingredients: Pepitas and Golden Raisins, these Golden Raisin Pepita Muffins are a healthy, yummy, Vegan snack.
Last year, I posted my Dye Free Green Muffins for St. Patrick’s Day since I wanted to make something yummy and chemical free. By the way, those are delicious too! Who knew, Sunbutter turns green when it is baked? Mmm!
This year, same thing, I wanted to make Muffins for St. Patty’s Day (these do look green, right???) but these Golden Raisin Pepita Muffins are Raw Vegan (no baking required!) And they only have 2 ingredients- Golden Raisins and Pepitas (Shelled Pumpkin Seeds!)
Furthermore, these are really easy to make. All you need is a trusty food processor. I use this one from Cuisinart.
Golden Raisin Pepita Muffins
This is going to sound dumb, but if you don’t like raisins, you won’t like these;) They are sweet and tangy, which I found to be delightful:) But I realize, it’s an acquired taste.
Never tried Pepitas? You should! They are a nutritional powerhouse and even make an appearance on the World’s Healthiest Food List. According to the website, “Pumpkin seeds are a very good source of phosphorus, magnesium, manganese and copper. They are also a good source of other minerals including zinc and iron. In addition, pumpkin seeds are a good source of protein.” You can’t beat that!
