Unlike me, (Chia Pudding everyday? Yes please!) Julian gets bored having the same thing for breakfast every morning. So, I have to constantly come up with new recipes that he will not only eat (he eats most of my cooking without complaint,) but enjoy.

But…I recently discovered that Julian won’t tell me if he doesn’t like something I’ve made. Last week, I baked some Paleo, sugar-free cookies for Julian’s lunches. And they kept coming back uneaten in his lunch bag. When I asked why, he would just tell me that he was too full to eat them. Too full to eat cookies???? He finally confessed that he didn’t like them, but didn’t want to hurt my feelings. Ahhhhh.

I know Julian loves Grilled Cheese. He would eat it everyday if I let him. So that is the inspiration behind this week’s breakfast. And he loved these. Who wouldn’t with so much cheesy goodness??

Fresh out of the oven. Yum! They kinda exploded all over my pan. But that’s ok, it was a really delicious clean-up. The crusty cheese on the pan was so good, and I don’t even eat cheese!

Again, these are only 3 easy ingredients: gluten free toast, eggs and cheese. I like to use this Gluten free bread. Of course, you can use any bread you like:))) They freeze well and can be reheated for 1 minute in the microwave.

Grilled Cheese Muffins

Prep Time: 5 minutes

Cook Time: 22 minutes

Total Time: 27 minutes

Serving Size: 6 muffins

Grilled Cheese Muffins


  • 6 eggs, whisked
  • 1/2 C Shredded Cheddar cheese
  • 1 piece Gluten Free Toast
  • 1/2 Tsp Salt


  1. Preheat oven to 375 degrees
  2. Spray 6 muffin tin with nonstick spray
  3. Whisk the eggs
  4. Tear the toast into tiny pieces
  5. Combine all ingredients in a bowl
  6. Stir until blended
  7. Spoon into 6 muffin cups
  8. Bake for 22 minutes

You can sub the cheddar for any cheese
