Love your Heart Muffins were made these in honor of Heart Month. Apparently, Heart Disease is the number one killer among Women. Wow! I was shocked to hear that. Fortunately, I don’t think I have had anyone pass from Heart Disease in my family. High Blood Pressure is a contributing factor, so calm down people! Relax and enjoy a muffin:)
While technically not a muffin (maybe I should Wiki the definition of Muffin, lol,) these are easy to make, yummy and good for you. And all of the ingredients can be found on the World’s Healthiest Food List.
I used roasted beets that I had on hand for this recipe, but you can use raw or jarred/canned beets as well. I had an avocado that was getting too soft, so I threw that in with some Pepitas, Flax seeds, Cocao Powder and Shazam! A Vegan snack in a flash.
I just happened to have a heart shaped cookie cutter so I used that. This recipe made exactly 2 muffins. After processing, I put the “dough” onto wax paper and pressed it out.
I ate one and gave one to Julian (my sweetie!) I thought he would only take one bite and give it back, (I was secretly hoping he would, so I could could eat it,) but he ate the whole thing!
