No doubt about it, my day j0b is hard. There is no way I could do what I do with out the help of my instructional assistants. I am beyond grateful for them everyday. each one of them brings their unique and beautiful personalities to our classroom. If just one of them calls in sick, the whole class feels the absence. The students love them, as do I.

Since I have 6 wonderful women who work with me, it can be expensive to gift them as much as I would like. However, I can bake:) I made them a deal that I would always bring healthy treats to our weekly Team meetings. Since it seems like everyone is health conscious or on diet, I make sure the treats are healthy, clean eats. But, I want them to taste good!

Last week, one of my aides wouldn’t eat my treats. Of course, I tried not to be offended but then she mentioned she is on a low carb diet. With that in mind, I set out to create a recipe that she would actually eat. And that is how my Low Carb Chocolate Cheesecake Muffins were born-out of gratitude:)))


P.S. My instructional assistants loved these. Of course, the person I had in mind when I made them told me she is lactose intolerant, lol. Oh well, more for me and Julian!

Low Carb Chocolate Cheesecake Muffins

Prep Time: 10 minutes

Cook Time: 18 minutes

Total Time: 28 minutes

Low Carb Chocolate Cheesecake Muffins

Low Carb Chocolate Cheesecake Muffins


  • 8oz Cream Cheese, softened
  • 4 eggs
  • 1/2 C sugar or substitute like Swerve
  • 1/4 C Cocoa Powder


  1. Preheat oven to 400 degrees
  2. Blend the cream cheese, eggs, cocoa powder and sugar in a food processor until smooth and creamy
  3. Divide evenly into a well oiled muffin tin.
  4. Bake for 15-18 minutes
  5. Wait until cooled to try to remove them from the muffin tin.
