4 simple ingredients, 1 simple process. I love making Raw Vegan treats. Fruit serves as sweetener and there’s no need for extra stuff. These Mango Cranberry Snowballs contain Mango, Dates, Cranberries and Coconut. That’s it! They are nut free, so my son and all my allergic friends can indulge;)
Feeling the need to make something Christmasy, yet plum sick of baking, what? I created these Snowballs. Yes, it’s true, I’ve spent way too much time in the kitchen this past week.
Not only did I bake my own creations, but I baked huge batches of Granola and Cookies for my co-workers. I want to Marry You Cookies and Pumpkin Granola were among my favorites. Of course, I veganized these recipes. But if you’re not Vegan, I’m sure these recipes would taste amazing the way they were written.
Mango Cranberry Snowballs
Soaking the fruit in water in key. Even the most powerful food processors won’t be able to grind through dried Mango. Just make sure to drain it well or the blend will be too mushy to hold it’s shape. I used this handy food processor for these treats.
Finally, I used Unsweetened, Organic Fruit and Shredded Coconut. I think it’s a shame when they douse dried fruit with with sugar and toxic chemicals.
This Christmas, I’m going to Arizona to visit family. I’m excited because this will be the first time I can actually make it the Annual McGregor Cousin’s Christmas. Yippee!!
