No Bake Crunchy Sunbutter Muffins
I looove Crunchy Sunbutter. Well, traditional Peanut Butter is my favorite, but Sunbutter will do. Sunflower seeds are so yummy and good for you.
Benefits of Sunflower Seeds include: Promotes Cardiovascular Health, Healthy Cholesterol Levels, supports mood and are a powerful antioxidant. They are chock full of Vitamin E, Magnesium, Folate and Selenium. Good Stuff!
I made these on a day when I just didn’t want to turn on the oven, but wanted to make a new muffin recipe. So, I rooted around my cupboards. (Truth be told, most of my recipes are developed based on what I have in my cupboard at that time.)
On this particular day, it was hot. Yes, that’s right, a heat wave in February. That’s San Diego for you! Sorry East Coast, but that’s why I pay the big bucks to live here.
Anyway, I had some Sunbutter, Organic Oats, Sunflower seeds and sugar. So, I got to work. I basically threw all the ingredients in a big bowl, stirred and pressed into muffin cups. I sprayed my mini muffin tin with nonstick spray to make sure they would slide right out. They did!
I love my mini muffin tin. It makes the perfect bite sized treats!
