Who doesn’t love Cheesecake? Unfortunately for me, it kills my stomach. Frequently, I see recipes for “Vegan” cheese and cheesecake made with Cashews. Apparently, when soaked and blended, they have a “cheesy” quality. So, I set out to make these Vegan Cherry Cheesecake Muffins just to see if I could:)

Typically, my way of creating new recipes invloves me throwing ingredients together, seeing if it works and then quickly writing down the ingredient amounts before I forget.

I’m happy to report, I like the way these came out. They are certainly delicious and I love that they are sugar free. Sadly, Julian can’t partake due to his nut Allergy. But, that is why I only made 4. Goodness knows I don’t need a freezer full of treats, even if they are sugar free. Feel free to adjust the recipe if you would like to make more.

Although Julian is allergic to nuts, I do keep some in the house, specifically Cashews. Accordingly, 2 handfuls a day has the same affect on the body as Prozac. While I’m not depressed, I think of them as my little happiness pills. Plus, they are a yummy snack:)

Vegan Cherry Cheesecake Muffins

Prep Time: 10 minutes

Total Time: 1 hour

4 Muffins

Vegan Cherry Cheesecake Muffins

Ingredients

  • 4 TBSP Coconut Oil, Divided
  • 4 TBSP Flax Meal
  • 1/2 C Cashews
  • 1/2 C Coconut Milk
  • Juice from 1 lemon
  • 1/2 Dark Cherries
  • Stevia to taste

Instructions

  1. Prepare Muffin Tin with nonstick spray and/or liners
  2. Blend Flax Meal with 2 TBSP Coconut Oil
  3. Press into muffin tin and place in freezer
  4. Blend Cashews, 2 TBSP Coconut Oil, Lemon and Coconut Milk in a Food Processor until blended
  5. Add Stevia to your desired sweetness
  6. Spoon on top of base and return to freezer
  7. Mash Cherries until runny and add Stevia to taste
  8. Spoon on top of Cheesecakes
  9. Place in Freezer about 1 hour or until firm
