So, I have to admit, I was biting back the tears today during Julian’s High School registration. If he saw the tears, he would have been mortified! I can’t believe my baby boy is going into High School!! It was just yesterday that he started Kindergarten, right?? But I am embracing this new chapter in my life. Oops, I mean his life! He is nervous and rightly so, high school can be scary. My only hope is he stays in his own truth.
Now that I’ve recovered (maybe) I’m back in the kitchen for a baking session. When I asked Julian which muffin I should make for my first post and he said, “Chocolate Chip.” So, naturally, as a good mother, I choose my Superfood muffins, Ha! I make these muffins when I want to make sure Julian is getting good quality protein and fiber in his breakfast. Basically, he eats these every morning;)
Superfood Muffins Recipe:
2 C Organic Flour or Gluten Free Flour
1 Tbsp Baking Powder
1 Egg, whisked (or 1 Flax Egg= 1TBSP Flax+3 TBSP Water)
1 Tbsp Chia Seeds
1 Tbsp Flaxseed
1 Tbsp Hemp Protein Powder
2/3 Cup honey
1 Cup Filtered Water
1/4 Coconut Oil
Preheat oven to 350 Degrees.
Blend dry ingredients.
Blend Wet ingredients.
Combine wet and dry ingredients. Do not over mix! Stir about 15 times or until blended.
Transfer to a well oiled muffin tin.
Bake 18-20 min. (My oven baked them in exactly 18 minutes.)
Secrets of the trade:
1) Ground Flax is more digestible than whole seeds.
2) Hemp can get expensive, so you can sub flax and/or chia
3) You can add chocolate chips if you would like. If I do, I use these: Enjoy Life Semi-Sweet Chocolate Chips, Gluten, Dairy, nut & Soy Free
