I love Girl Scout Cookies as much a the next person, especially Samoas. But let’s get real. Have you ever actually looked at the ingredients list? Hydrogenated oil, really? Yuck. I think most people just look at the calorie count and nothing more. 160 calories per serving? Not bad. But when you eat an entire box, that’s a different story. The fat, sugar and oil is so addicting.
Yes, I am guilty of buying Girl Scout Cookies from co-workers for Julian. He loves his Samoas. 2 boxes were gone in 2 days. But that was followed by a week-long stomach ache that left him barely able to eat dinner.
Me? I no longer touch cookies (or anything with a label for that matter!) Instead, in make my own versions. And that, my friends, was how this recipe was born. Raw, vegan deliciousness. I had to stop myself at just one. I seriously think I could have eaten the entire batch!
