Raw Vegan “Samoas” Muffins

I love Girl Scout Cookies as much a the next person, especially Samoas. But let’s get real. Have you ever actually looked at the ingredients list? Hydrogenated oil, really? Yuck. I think most people just look at the calorie count and nothing more. 160 calories per serving? Not bad. But when you eat an entire box, that’s a different story. The fat, sugar and oil is so addicting.

Yes, I am guilty of buying Girl Scout Cookies from co-workers for Julian. He loves his Samoas. 2 boxes were gone in 2 days. But that was followed by a week-long stomach ache that left him barely able to eat dinner.

Me? I no longer touch cookies (or anything with a label for that matter!) Instead, in make my own versions. And that, my friends, was how this recipe was born. Raw, vegan deliciousness. I had to stop myself at just one. I seriously think I could have eaten the entire batch!

I placed everything into my trusty food processor, pressed into my mini muffin tin and placed in the fridge. The great thing about Coconut Oil is that is hardens as it gets cold. These firmed up quickly quickly. However on a hot day, they will melt just as quickly.
