I created this recipe after a long run on the beach. It hit the spot. But, pretty much anything tastes good after a sweaty run. So, I made it again later for Julian. He liked it too!! That means, this is a thumbs up recipe:)

I love that this recipe can be made in less than 2 minutes. Just a quick stir of the ingredients and in the microwave it goes.
Awhile back, I posted a recipe for Recovery Muffins. These are awesome! But sometimes, you don’t want to wait to pre-heat the oven, especially if it’s hot!
Both Dark Cherry and Beet Juice are excellent recovery drinks. They are high in antioxidants and can actually improve athletic performance. You can swig it down, or add it to a muffin recipe like I did! If you want another great muffin recipe with Beets and Cherry Juice, try this one.
For this recipe, you can use any flour you like. In general, I avoid grains. But hard workouts require a good balance of carbs and Protein, so I’m not strict about it. I used Spelt because that is what I had on hand. For Gluten Free, just use your favorite Gluten Free Flour Mix.
