They are vegan, clean eating at it’s best. I used Gluten Free Oats, Organic Strawberries, Coconut Oil and Coconut Sugar to sweeten. Coconut Sugar is supposed to be better for you. On the Glycemic Index scale, it is 35, whereas white sugar a 60. But I know that sugar is sugar;)

Since Strawberries are in season, they are on sale everywhere I shop. I love it! I usually buy a bunch and then pop them in freezer for smoothies. This time, I decided to throw them in the blender, not for a smoothie, but muffins. Of course!

Blender Muffins are my new favorite discovery. It’s so easy to just throw everything in, push start and then pour the batter into a muffin tin. Easy Peasy! I use this blender and I love it. It’s powerful and chops right through my veggies, like celery and cucumber.

With 4th of July right around the corner, these would be perfect to take to a potluck. Me, I don’t go out much. And the thought of crowds sends my nerves into overdrive. So, I will be avoiding my favorite beach this weekend. Boo! But that’s ok. I’ll be back on the beach the day after the 4th when everyone else is hung over, lol.

Strawberry Oatmeal Blender Muffins


  • 1 1/4 C Organic Oats
  • 9 Strawberries
  • 1 TBSP Coconut Oil
  • 1/2 Tsp Baking Powder
  • 1/4 C Coconut Sugar or preferred sweetner


  1. Preheat oven to 350 Degrees
  2. Blend all ingredients in a food processor until smooth
  3. Spoon into prepared muffin tin
  4. Bake 15 minutes or until a toothpick inserted comes out clean
