Super Seed Muffins
My Super Seed Muffins were inspired by a Pin from my Pinterest Good to Know! board. It states that you can actually eat the seeds from Cantaloupe. Who knew?? I love roasted seeds, but these are so tiny, it seemed like a hassle. So, I threw the seeds into a blender with my other ingredients (including other high protein/fiber Super Seeds) and there you have it! Yummy Super Seed muffins. I love when inspiration strikes in unlikely places!
Julian has actually been enjoying these this week for breakfast. The hemp seeds give them a nice, nutty flavor without the nuts. Since Julian has a nut allergy, I really don’t bake with nuts because I don’t want to have cross contamination. Although nuts are yummy and nutritious, Super Seeds are a great substitution.
If I do HAVE to HAVE Peanut Butter (which, thrust me, happens) I make sure and keep it in a separate space in the kitchen. I also wash the spoon with a different sponge. Notice I said “spoon.” Can Peanut Butter be eaten any other way???
When he was 2 years old, we found out Julian was allergic the hard way: anaphylaxis. After eating some nuts at his grandma’s house, his throat started to close up. The paramedics said he was blue when they arrived and he ended up in the ER. Scariest day of my life!! My heart is beating like crazy right now as I think back.
After allergy testing, we found out he is not only allergic to Peanuts, but ALL tree nuts. More than likely, he will carry an EpiPen for the rest of his life. Luckily, he remembers that fateful day and won’t eat anything unless he is certain it is nut free. And it’s so hard when someone brings delicious looking treats to school! But we are diligent, read labels and bake our own delicious looking treats;)
