Need to Detox? I do. Geez, I over ate this holiday season. But, ohhh, it was all so good. Usually, I will eat treats one day and then eat well the next. But I went at least an entire week of just cramming what ever sweet things came my way into my mouth. And I didn’t hold back at Christmas either. You know the plate of cookies for Santa? Guess who was Santa this year??

Christmas Dinner with the Family

Now that we are out of the holiday season, I can get back to creating healthy recipes. Until Valentine’s Day. and Easter;)

 I love a salad with Watercress. It is a superfood with powerful detox properties. But Watercress in a muffin?? Ehhh. I had to make them taste good. Figs are naturally sweet and high in fiber; a perfect for the base for these muffins. Lemon juice (another great detoxifying food) cayenne pepper and Almond Butter round out these tasty bites.

These are easy to make: just throw everything into a high powered food processor and blend. I pressed them into a mini muffin tin and popped them in the refrigerator to harden.

Sweet n’ Spicy Detox Muffins

Prep Time: 5 minutes

Total Time: 5 minutes

4 mini muffins

Sweet n’ Spicy Detox Muffins

Ingredients

  • 3 Dried Figs
  • Juice of 1 lemon
  • dash a Cayenne Pepper
  • 5 leaves of Watercress
  • 1/4 C Almond Butter

Instructions

  1. Chop the figs and place in food processor
  2. add the remaining ingredients
  3. Process until blended, scraping down the sides as necessary
  4. Press into 12 mini muffin cups
  5. Pop in the fridge to harden (about 15 minutes)

*I used Sunbutter
