If you ask me what my favorite food is, I will always say a PB n’ J sandwich, preferably with Peanut Butter oozing out of the side. However, I only eat these before/during and after a race. I created these Triple Layer Crunchy PBJ Muffins as a healthy alternative to my my favorite meal. Best of all, they require no fancy equipment and are actually good for you:)

For this recipe, I used Sunbutter. Since Julian is allergic, I don’t keep it in the house. But you can sub any nut butter you prefer. Also, I didn’t add any sweetener besides a few drops of Liquid Stevia to the berry layer. Again, up to you on how sweet you would like these.

Another great thing about this recipe is that it can be made with only a spoon and bowl.

Triple Layer Crunchy “PB n’ J” Muffins

Prep Time: 5 minutes

6 mini muffins

Triple Layer Crunchy “PB n’ J” Muffins

Ingredients

  • Bottom Layer:
  • 1 TBSP Coconut Oil
  • 2 TBSP Flax Meal
  • Middle Layer:
  • 2 TBSP Sunbutter
  • 1 TBSP Sunflower Seeds
  • Top Layer:
  • 1/4 Frozen Blueberries
  • 1 TSP Chia Seeds
  • Stevia to Taste

Instructions

  1. Prepare mini muffin tin with liners and/or nonstick spray
  2. Microwave the blueberries until they are juicy (about 1 minute)
  3. Blend Chia and Stevia with the berries and set aside
  4. Blend the Coconut oil and Flax until well blended and press into the bottom of the muffin tin
  5. Spoon Sunbutter and Seeds on top
  6. Spoon the blueberries on top of the sunflower seeds
  7. Pop in the freezer for about 10 minutes
