 I made these Caramelized Pear-Banana Muffins mostly because I had some pears that were looking a little neglected and a ton of over-ripe bananas. I decided to make them vegan and gluten free because I also wanted to eat them! The bananas work as a great binder without using eggs.

You might have noticed I’ve been making more Vegan recipes lately. No, I’m not Vegan, but compassion seems to be a recurring theme in my life lately. So, I have been inspired to try recipes that have minimal impact on the animal world. My Caramelized Pear-Banana Muffins have few ingredients and a ton of flavor without animal products!

I am so fortunate to work in a school that is actually sponsoring a Mindfulness/Compassion  course for the staff. I am loving it. The practice of mindfulness has changed my life. I used to think that I was too much of a spaz to meditate. So, I would consider my runs and swims as meditation. They still are!

But I’ve actually learned that mindfulness isn’t really about sitting in a chair mediating, it’s about being present. Being here, now. So while, yes, you can be present while sitting in a locus position focusing on the breath, you can also be present eating, washing dishes, having a conversation, driving or anything! Of course, I am fully present when I am baking:)

The act of being present and staying in the NOW has increased the joy, compassion and love in my life, while decreasing my stress level. I find it easier to extend compassion toward others and more resilient to any setbacks in my life. With a regular compassion practice, I feel more closely connected to everyone and everything on the planet.

Caramelized Pear-Banana Muffins

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Caramelized Pear-Banana Muffins


  • 2 C Gluten Free Oats
  • 2 Chopped Pears
  • 2 Mashed Bananas
  • 1tsp Cinnamon
  • 1/2 tsp salt
  • 1/4 C Coconut
  • 1TBSP Butter, Ghee or Coconut Oil for Vegan
  • 2 TBSP Brown Sugar


  1. Preheat the oven to 350
  2. Heat the oil and brown sugar in a pan over medium heat
  3. Add the pears and bananas
  4. Stir until nice and caramelized (about 10 min)
  5. Blend 1/2 C oats in a blender until it resembles flour
  6. Combine all the dry ingredients
  7. Add the pears and bananas to the dry ingredients
  8. Blend
  9. Spoon into a well oiled muffin tin or 10 silicone baking cups
  10. Bake for 20 minutes
