Paleo Pancake Muffins
Julian and I love “Nana Cakes”, but I love my take on them, Paleo Pancake Muffins, even more. They are a real time saver because I can make them ahead of time and defrost as needed. Plus, the ingredients in these muffins are clean and a staple in our house. I buy organic eggs and bananas from Costco and trust, me, they never go to waste.
Don’t get me wrong, I love making “Nana Cakes.” With only 2 ingredients: banana and egg, they make a fluffy, sweet, yummy breakfast. But with school starting up again, I don’t have time in the morning to brush my teeth, let alone whip up breakfast. I make a big batch of these Paleo Pancake Muffins on Sunday, individually freeze and then microwave for 1 minute in the morning. A perfect way to start to the day!
I dabble in Paleo cuisine. For awhile, it was my primary way of eating. And for the most part, I do. But when I’m racing a lot, I eat whatever the heck I want because I know that I will run it off. No cake is off limits and yes, I have eaten Pumpkin Pie in the middle of a race. But I realized when I eat this way, my digestion gets sluggish and I get irritable and bloated.
Recently, my doctor ordered a celiac test and everything came back normal. I realized I don’t have any medical reason for not eating gluten. However, I do feel better overall when I stick to a Paleo diet. When it comes down to it, it’s really about eating clean. For me, clean eating=optimal health and happiness.

Blend a frozen banana and 2 Tbsp. Coconut Milk in a food processor. EAT! YUM!
