Do you ever have so much to do that you just stand there and do nothing or do something totally unrelated??? Happens to me all the time. I have been back to work this week getting my classroom ready for school next week. There is still so much to do that I will have to go in on Saturday. It’s ok, because I know it will all get done. My new motto is, “Don’t worry, everything is going to be amazing!” But, it’s just stressful right now!

Crazily, many times this week I was so busy, I forgot to eat. And exercise. And I NEVER forget to eat or exercise! Breakfast came at noon today and last night, I found myself jumping on my rebounder at 10pm. How many times do we need to be told to care of ourselves first before it sticks???

This type of craziness is the reason why it is so necessary for me to prep quick foods (like muffins) on weekends. My Paleo Blueberry Muffins are sooo yummy and healthy. While I don’t follow a strict Paleo diet, I love to bake with Coconut Flour. It just has great flavor and I feel good grabbing this as a snack. I hope you enjoy it as much as I do!


Paleo Blueberry Coconut Muffins

Prep Time: 10 minutes

Cook Time: 40 minutes

Serving Size: 6

Paleo Blueberry Coconut Muffins

Paleo Blueberry Coconut Muffins


  • 1/2 C Coconut Flour
  • 3 Eggs, whisked
  • 1/4 C Coconut Milk
  • 1/2 C Blueberries
  • 1/4 C Apple Sauce
  • 1/4 C Coconut Oil
  • 1/2 Tsp Powdered Stevia to taste


  1. Preheat oven to 350 Degrees.
  2. Blend dry ingredients.
  3. Blend wet ingredients.
  4. Combine dry and wet ingredients.
  5. Do not over mix! Stir about 15 times or until blended.
  6. Transfer to a well oiled muffin tin.
  7. Bake 40-45 min or until the tops spring back when touched
