Like last year, I wanted to create a treat for my birthday that I could enjoy without going overboard. But the fact that I scarfed down the cake that a co-worker bought me makes this statement laughable. And although these muffins are similar to the ones I made last year, these seem more decadent. I guess I’m getting less strict with my diet as I get older, ha!

The inspiration behind these Gooey Flourless S’Mores Muffins are S’Mores, of course-one of my all time favorite treats. I used Rice Crispies instead of Graham Crackers for crunch, mostly because I had some in the cupboard, but also because they are Gluten Free.

Sunbutter, bananas, marshmallows and Cocoa Powder round out the recipe. When blended, the mix is so delicious looking. I had to refrain myself from diving head first into the bowl;)

Bonus time! These are made with no flour or animal products. If you are vegan and concerned about the marshmallows, I like this brand of Vegan Marshmallows.

But also a house cleaning!!! I want one weekend where I am not scrubbing the floors. Seriously, this is such a treat for me.

How old am I? I actually forgot and had to look up my age on running website. For real! I am now 43 years old and don’t feel a day over 20. Life is good! I am happy, healthy and grateful for another birthday!!

Cook Time: 20 minutes

Total Time: 25 minutes

12 Mini Muffins

Gooey Flourless S'mores Muffins


  • 2 Very Ripe Bananas
  • 1/4 C Cocoa Powder
  • 1/4 C SunButter (or your favorite Nutbutter)
  • 1/2 C Marshmallows
  • 1/2 C Rice Crispies


  1. Preheat Oven to 350 Degrees
  2. Mash the bananas
  3. Fold in the rest of the ingredients
  4. Stir until blended
  5. Spoon into muffin cups
  6. Bake 20 minutes
