For this recipe, I wanted to make something  Julian could enjoy. He loves cheesecake, but all the Vegan “Cheesecake” recipes are made with Cashews. On this beautiful day, I set out to create a nut free treat. I think, the Coconut Lemon Combo is perfect:)

To begin with, I used Flax Meal and Coconut Oil for the Crust. It’s easy to make in a small bowl. And the bulk of the muffins are Shredded Coconut and Lemon Juice. For sweetener, Maple Syrup does the trick, but you could also use Stevia to save calories.

Why Youtube? For starters, it’s free! Fortunately, I did not have to pay for the 8 Week Mindfulness Course I took last year. Kate Munding is an amazing facilitator and I feel so blessed that I was able to participate.

When the course was done, I looked around for other Guided Meditations and that’s when I stumbled upon Youtube. And people post some high quality videos! You’ll find soothing, calming voices and loving words that will infuse the body and mind. As such, my favorite channels are Linda Hall, The Mindful Movement and Power Thoughts Meditation Club. Coconut Lemon Muffins (Nut Free, Raw Vegan)

Prep Time: 5 minutes

6 mini muffins

Coconut Lemon Muffins (Nut Free, Raw Vegan)

Ingredients

  • Crust:
  • 1 TBSP Coconut Oil
  • 2 TBSP Flax Meal
  • Top:
  • 1/2 C Shredded Coconut
  • 2 TBSP Coconut Milk
  • Juice from one Lemon
  • 1 TBSP Maple Syrup*
  • 1/2 Tsp Lemon Zest

Instructions

  1. Mix the flax with the coconut oil
  2. Blend until it is a smooth mixture
  3. Press into the bottom of the muffin cups
  4. Mix the remaining ingredients
  5. Spoon on top of the crust
  6. Put in the freezer for about 10 minutes
  7. Left soften at room temp for a few minutes before eating:)

*Taste test and add sweetener as desired. I like to sweeten with Stevia
