Vegan Pre and Post Workout Muffins
Today is my last official day of summer break. So, I decided to celebrate with a lovely run on the beach near La Jolla and my Vegan Pre and Post Workout Muffins.
It is so gorgeous here! When I run, feel like I’m on vacation in my own city! I love a workout that doesn’t feel like a workout. Just breathing in the scenery calms my body and mind. I finish refreshed, not exhausted.
Don’t get me wrong, I’ve had an awesome summer. This year we traveled through Asia. Specifically, Singapore, Cambodia, Thailand, Vietnam and Hong Kong. Asia has been on my bucket list and it did not disappoint! While it was hot, we made sure to stay active while on vacation. Gotta work off all the great food!!
After my run, I wanted to go do my shopping at Trader Joes, so I packed my Vegan Pre and Post Workout Muffins. This way, I can quickly begin to recover by getting good quality carbs and protein in my body. I’m also not famished when I shop because shopping on an empty stomach is dangerous! Somehow, when I’m hungry it seems like a great idea to buy the 5lb bag of Kettle Corn.
