Vegan Fudge Muffins

I love Vegan Fudge!! Combine cocoa powder with mashed avocados to make a creamy dessert. I have given this to Julian several times and if he knew it was “healthy” he never mentioned it.

Vegan Fudge Muffins, because sometimes, you just need a little something without compromising your commitment to a healthier lifestyle. These are healthy and made with unrefined sugars. The avocado adds fiber and nutrients so you are satisfied.

I am a stress eater. It has taken me 42 years to figure this out. But now, I have to admit to myself that I am. I never eat crap during the summer months when I’m off work. I am so relaxed and happy, I don’t even crave it. But now that I’m back to work, I’ve been tempted to lunge for the sugar bowl. Thankfully, we no longer have a chocolate dish at work, or I would be in trouble.

However, I also realize, I need to deal with my stress in other ways besides eating. Running helps, but so does baking! Once a friend said to me, “Marla, you’re stressed, go bake us some banana bread or something.” True story!

I made these Vegan Fudge Muffins on a Friday afternoon after a really stressful week. I wanted a chocolate fix without having a binge fest. (Typically, one bite of sugar will send me searching for more!) These gave me the right amount of yumminess without undoing all my hard work in the gym. This recipe also curbs my cravings. Also, I am old enough now to realize that when I eat crap, I feel like crap.

I had some avocados on my counter that were really ripe. And I remembered a recipe I once made that used avocados and cocao powder to make a chocolate pudding. So, I set about making the pudding first. The pudding by itself was so good, I licked the bowl clean. Then, I added it to my basic muffin mix.These muffins are very moist, as you can see in the picture. But moist=deliciousness.

Vegan Fudge Muffins


  • 1 C Organic Flour
  • 2 Avocados, mashed
  • 1/4 C Cocoa powder
  • 1/2 C Maple Syrup
  • 1/2 C Apple Sauce
  • 1/2 Brown Sugar
  • 1/4 C Filtered Water


  1. Preheat Oven to 350 Degrees
  2. Make the Fudge: Blend the avocados, maple syrup and Cocoa Powder
  3. Add Flour, apple sauce, sugar and water to the fudge
  4. Stir just until mixed
  5. Spoon into a well oiled muffin tin
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean

When I microwaved these the next day, they deflated. But that's ok, because it was like Chocolate Lava Cake!
