The Best Darn High Fiber Muffins are high in fiber, low on sugar and big on taste. Who says you have to gulp down a Bran muffin (you don’t want to eat) to get your fiber? Not this girl! Food should taste good! These taste so good, I’ve been secretly wishing that Julian wouldn’t finish his in the morning so that I could have the rest;)
I wanted to make a muffin that not only tasted good, but was healthy as well. For me, healthy means whole foods with no added sugar or grains. With the banana and dates, I know we are getting a good dose of vitamins. While the Chia and Flax provide of a dose of Omega 3’s. Not to mention the Fiber!!
I’ll admit, before I started a Plant Based Diet, I ate Fiber One cereal everyday. Yes, it gave me my daily dose of Fiber, but it also had a lot of other crap I didn’t want-corn, wheat and artificial Sweeteners. Yuck! I started to look for whole foods that would provide a similar amount of fiber. That’s when I discovered Chia, Flax Meal and Cocao. Did you know that Cocao Powder is high in Fiber? I didn’t! And Coconut Flour? Get out!
