Food should taste good! These taste so good, I’ve been secretly wishing that Julian wouldn’t finish his in the morning so that I could have the rest;)

I wanted to make a muffin that not only tasted good, but was healthy as well. For me, healthy means whole foods with no added sugar or grains. With the banana and dates, I know we are getting a good dose of vitamins. While the Chia and Flax provide of a dose of Omega 3’s. Not to mention the Fiber!!

I’ll admit, before I started a Plant Based Diet, I ate Fiber One cereal everyday. Yes, it gave me my daily dose of Fiber, but it also had a lot of other crap I didn’t want-corn, wheat and artificial Sweeteners. Yuck! I started to look for whole foods that would provide a similar amount of fiber. That’s when I discovered Chia, Flax Meal and Cocao. Did you know that Cocao Powder is high in Fiber? I didn’t! And Coconut Flour? Get out!

Grand Total=86 Grams of Fiber in this recipe. So, that gives you a whopping 14 grams of fiber in each delicious Muffin.

Cook Time: 20 minutes

Total Time: 27 minutes

The Best Darn High Fiber Muffins


  • 20 Pitted Dates
  • 2 Very Ripe bananas
  • 2/3 C Filtered Water
  • 3 TBSP Chia Seeds
  • 3 TBSP Flax Meal
  • 2 TBSP Cocao Powder
  • 1/2 C Coconut Flour
  • 1 TSP Baking Powder


  1. Preheat oven to 350 Degrees
  2. Prepare a 6 cup Muffin tin with nonstick spray
  3. Blend the Bananas, dates and water in a food processor for about 5 minutes.
  4. Mix all the dry ingredients in a bowl
  5. Add the date mixture to the dry mix
  6. Stir just until blended
  7. Taste test and add sweetener as desired*
  8. Spoon into muffin cups
  9. Bake for 20 minutes or until a toothpick inserted comes out clean

* I added a bit of Stevia to make these a tad sweeter.

** These can be frozen. Just heat in the microwave for 1 minute when ready to eat.
