Triple Chocolate Protein Muffins. Triple Chocolate, because I realize most people just want chocolate. Protein, because I want to know if Julian is eating this for breakfast, he is getting something substantial in his belly. I made these muffins with oats, so they are Gluten free as well. The Triple Chocolate ingredients are: chocolate chips, cocoa powder and a vegan chocolate protein shake like this one . These make for a delicious treat or breakfast.

So, I have been struggling with my food photography. Well, I should say, Julian can only do so much with his i-phone. While I know my recipes are awesome, if I want anyone to look at this blog, I (we) need to take better pictures. The pictures just don’t convey how yummy my muffins are.

I researched several other foodie blogs and then bought a new camera. Can you tell?? Funnily enough, right after researching on Amazon, I clicked on a link on another person’s blog and they were recommending the same exact camera :)) It was meant to be!!

However, there is so much to learn about photography!! I had no idea what I was signing up for when I started this blog. It terrifies me. It overwhelms me. It makes me want to run screaming and just have Julian continue taking pictures with his i-phone. Julian actually took these photos with the new camera because he has a knack and I don’t yet. He just picked it up and started shooting. I wish I had a creative eye like he does!

However, I have never been one to shy away from a challenge. And I consider myself a life-long learner. I will learn the fine art of food photography, darn it! I will have my photos published on Tastespotting and Foodgawker!! Or maybe, I’ll just keep Julian as my official photographer;)

Triple Chocolate Protein Muffins

Triple Chocolate Protein Muffins (Vegan and Gluten Free)


  • 1 1/4 C Organic Oats
  • 3 TBSP Ground Flax
  • 1 C Vegan Chocolate Protein Shake
  • 1/4 C Cocoa Powder
  • 1/4 Dairy Free Chocolate Chips
  • Liquid Stevia to taste


  1. Preheat Oven to 350 Degrees
  2. Blend all ingredients in a large bowl
  3. Spoon into a well oiled muffin tin
  4. Bake 20-23 minutes or until a toothpick inserted comes out clean
