So this summer, I have had some awesome runs. I am so lucky that I can choose between the mountains, trails and beaches as my playground. And all of them are my favorite;)
When I get back in from a run, I don’t feel like making food. Actually nothing really sounds good. But I know I need to recover and refuel.
So, I discovered that a Protein Mug Muffin hits the spot. I re-load my carbs, repair with protein and satisfy my sweet tooth, all in one simple snack.
If I’m trying to cut out sugar, I use Liquid Stevia instead. When I do use a Glutenous Flour, I make sure it is Whole Grain and Organic. Spelt is my new favorite! And I recently discovered that Apple Cider Vinegar mixed with baking soda helps the muffin to rise.
