When I get back in from a run, I don’t feel like making food. Actually nothing really sounds good. But I know I need to recover and refuel.

So, I discovered that a Protein Mug Muffin hits the spot. I re-load my carbs, repair with protein and satisfy my sweet tooth, all in one simple snack.

I used a Vegan Protein Powder and Organic Spelt Flour as the base for this Muffin. But, as I noted in the recipe directions, use what works for you. Any flour, Protein Powder or Sweetener will work.

If I’m trying to cut out sugar, I use Liquid Stevia instead. When I do use a Glutenous Flour, I make sure it is Whole Grain and Organic. Spelt is my new favorite! And I recently discovered that Apple Cider Vinegar mixed with baking soda helps the muffin to rise.

Cook Time: 2 minutes

Vanilla Protein Mug Muffin


  • 2 TBSP Vanilla Protein Powder
  • 2 TBSP Spelt (or your favorite Flour) Flour
  • 1 TBSP Sugar (or preferred Sweetener)
  • 1/4 Tsp Baking Soda
  • 1/4 Tsp Baking Powder
  • 1/4 Tsp Apple Cider Vinegar
  • 4 TBSP Coconut (or your favorite Milk) Milk


  1. Mix all ingredients in a mug
  2. Microwave for 2 minutes
