Each day, we got a cute little present like a water bottle, hand made soap and a notebook. They also catered breakfast and lunch everyday that week. Yep, pretty sure I gained 10 pounds! But it was all so good!! Thank you PTA!!!

Of course, I’m not going to make a chicken dish. And I originally thought I would make a savory muffin with oats, thyme, olives and sun dried tomatoes. However, the more I thought about it, I realized no one would eat these except me. And I have no business eating an entire batch of muffins (even if they are healthy!)

I ran some ideas past Julian and he liked the idea of Lemon. Plus, he was craving white chocolate the other day, so that’s how these delicious morsels came to light.

I have never baked with Coconut Milk Yogurt before and I’m delighted these came out so moist. For a completely vegan option, you can use these Cocoa Butter Melts in place of the white chocolate.

These muffins have more sugar than I usually add to my recipes. But the protein in the yogurt and healthy lemons and thyme balance it all out;) And who knew that Thyme has so many health benefits like being high in Vitamin C, A, iron, as well as being a powerful antioxidant!?

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

White Chocolate Lemon Thyme Muffins

Ingredients

  • 2 C GF Flour
  • 1/2 C Sugar
  • 1/4 C Olive Oil
  • 1/4 C Filtered Water
  • 1 Tsp Chopped Fresh Thyme
  • 5 oz Coconut Milk Yogurt
  • 1 TBSP Fresh lemon Juice
  • Zest of 1 Lemon
  • 3/4 C White Chocolate Chips
  • 1 Tsp Baking Soda
  • 1 Tsp Baking Powder

Instructions

  1. Preheat Oven to 350 Degrees
  2. Prepare muffin tin with non-stick spray
  3. Mix dry ingredients
  4. Mix wet ingredients
  5. Combine Dry and Wet ingredients
  6. Fold just until blended
  7. Spoon into muffin cups
  8. Bake for 15 minutes or until a toothpick inserted comes out clean
